Dried on African raised beds for a minimum of three weeks with a process that includes handpicking to remove under-ripe or damaged cherries, regular stirring for even drying, and careful covering during the hottest midday hours to protect the beans. This extended, attentive process enhances the coffee’s natural sweetness and preserves its delicate character.
